DESCRIPTIONThis is a really good stack to feed 90 - 150 people, more like 90 if you're having it as a main buffet item, or up to 150 if it's after dinner cheese or you've got other nibbles going on. 39cm in height, this is a lovely looking wedding cheese cake. If you'd like to try the cheeses, just order a taster pack.
If you'd like a bit more to go round, you can order a few more Waterloo, Finn and Dorstone to serve on the side to make sure there is a good balance of soft as well as hard cheeses. If you feel there might be a bit too much, select the option with half a Worcester Hop - we'll cut it across the middle of the height so it'll be about 4.5cm high and 2kg.
The cheeses from the bottom to the top are:
Worcester Hop (previously Hereford Hop): A really tangy, creamy cheddar, made near Worcester and rolled in toasted hops from Herefordshire. Invented in 1990 it's softer than other Cheddars and has a strong distinctive flavour. This is a really popular cheese in these parts, so much so that we sold over 100kg of it last Christmas. (Recently changed it's name from Hereford Hop, this is the version that we've always sold and we're sticking with it!) Cow's milk, Pasteurised, Vegetarian, 24cm x 8cm. 4kg.
Colston Bassett Stilton: The best stilton available in our opinion. Gorgeous and creamy, full of flavour and still hand made it's a lovely addition to a wedding stack. Cow's milk, Pasteurised, Vegetarian, 21cm x 8cm. 2.6kg.
Waterloo: A gorgeous creamy brie. Buttery and delicious, it's mid strength so should please a crowd. Cow's milk, unpasteurised. 17 x 3cm. 800g.
Cornish Yarg: A lovely gentle hard cheese. Mild yet full of flavour, it's a great looker, covered by nettles. It gives this stack great height. Cow's milk, pasteurised, vegetarian. 13cm x 9cm. 1kg.
Finn: A mature, double cream cheese made up the road at Neal's Yard Creamery, Dorstone. It has a firm texture with a fresh creamy acidity. Weighing about 200g, they are 9cm wide by 4cm. Unpasteurised, cow's
milk. 9cm x 4cm. 200g.
Dorstone: A wonderfully smooth ashed goats cheese from the Neals Yard Creamery. Named after the Herefordshire village near where the cheese is made. ; Cut open the slightly funky looking exterior and you'll be presented with gorgeous, soft, pure white moosey goats cheese yummyness. It's a great topper to a wedding stack and looks amazing on any cheese board. Unpasteurised, goat's milk. 5cm x 7cm. 200g.
For a wedding stack we recommend 50 - 100g per person, depending if the cheese is to be eaten straight after the meal or later in the evening and with other food or by itself. We can very happily advise over email so drop us a line on email@example.com for ideas for a bespoke cheese board for your wedding or event. We ask for at least a weeks notice for a wedding stack, if you want to guarantee your selection, give us three weeks, that way we can make sure your soft cheeses are ripened to perfection (but the longer the better as far as we're concerned!!). We only send the cheese, any decorations will need to be sourced elsewhere. Delivery costs £8.65 and is added at the check out, or you can select to pick it up in one of our shops.
