    Bleu Des Causses benefits form an Protected Designation of Origin and is sometimes considered a substitute for Roquefort, though it is milder.  Known as 'poor man's Roquefort', it is also cheaper as it is made from more plentiful cow's milk rather than Ewes (but it's still very delicious and perhaps more palatable if you find Roquefort a bit mega strong).  The milk used is from Montberliarde and Aubrac cows. It has a gorgeous creamy texture with a salty full flavour and is matured for 3-6 months in natural, north-facing limestone caves which are exposed to fresh breezes. Each cheese weighs approx. 2 to 3 kg.
