  • DESCRIPTION
    Cambozola is a German cheese.  A mild and creamy fine-veined blue with a delicate white rind. The cheese was invented c. 1980 and is still produced by the same company, Champignon.  Extra cream is added to the milk, giving Cambozola a rich consistency.  It's name refers to the Roman name Cambodunum of the city Kempten where Champignon is located and it's relation to Gorgonzola.  Much milder than Gorgonzola, it's often known as 'Blue Brie'.
