Hereford Sage cheese is made by the Monkland Cheese Dairy. The Artisan Cheese, Hereford Sage is a delicious medium hard cheese with fresh sage running through. The sage is added to the raw curds used to make their Little Hereford cheese and then pressed and matured for 6-10 weeks.
Monkland are based just down the road from our Leominster shop and actually started the Mousetrap Cheese shops before they were bought by Matt and Claire in 2012. Luckily Mark and Kass carried on making their lovely cheese for us to sell!
