DESCRIPTIONStinking Bishop cheese is made by Charles Martell from the milk of his herd of Gloucestershire cattle. The pungent smell of the cheese is in the rind, which is washed in perry made from the Stinking Bishop variety of pear. The bacteria in the perry cause the stink, but the flavour of the cheese is surprisingly more delicate (particularly if you hold your nose!). Made famous by the Wallace and Gromit films, The milk is pasteurised and vegetarian rennet is used. The pear was named after an infamous Ledbury farmer, Frederick Bishop, nicknamed Stinking Bishop, who was born in the mid-19th century and known for his drunken temper. Made in Dymock, Gloucester, just over the Herefordshire borders, we include this in our local cheese selection.
