A lovely mid strength blue, the lovely folk at Shepherds Purse advertise it as being mild but I think it has a bit more flavour than that really. Gorgeously creamy, with a lovely balance of flavour, I think this cheese suits a variety of tastes. This blue is made in Thirsk using Yorkshire cow’s milk which is pasteurised and vegetarian rennet. It is a handmade in a continental style which gives it a buttery-sweet flavour without a sharp bite. Softer blue cheeses are often made in foil to keep in the moisture and to stop a hard rind forming and the cheese drying out. Best English Cheese in the 2018 Cheese Awards, it’s made with vegetarian rennet.
