Feeding 90 - 150 people, Amelie cheese stack is a great value cheese wedding cake containing some really lovely cheese. 36cm in height, this is a lovely looking wedding cheese tower. If you'd like to try the cheeses, just order a taster pack containing 100g of each cheese.
Please note we've recently had to change the Amelie from having a Worcester Hop at the bottom as it's now being made in a new size which is the same as the stilton. One advantage to this is the new base cheese is 1kg heavier than it used to be but for the same price! It's not quite so tasty as the hop though so if you'd like the original Amelie, you can have the Worcester hop in quarters on the bottom which need to be spaced out a little under the stilton. It's the same price so please just specify the cut hop base in the message to the cheese shop in the checkout.
If you'd like a bit more to go round, you can order a few more Waterloo, Finn and Dorstone to serve on the side to make sure there is a good balance of soft as well as hard cheeses.
The cheeses from the bottom to the top are:
Inglewhite Cheddar: A nice, creamy cheddar, medium to tasty, it's great for a range of tastes. Cow's milk, Pasteurised, Vegetarian, 30cm x 5cm. 5kg.
Colston Bassett Stilton: The best stilton available in our opinion. Gorgeous and creamy, full of flavour and still hand made it's a lovely addition to a wedding stack. Cow's milk, Pasteurised, Vegetarian, 21cm x 7cm. 2.6kg.
Waterloo: A gorgeous creamy brie. Buttery and delicious, it's mid strength so should please a crowd. Cow's milk, unpasteurised, vegetarian. 17 x 3cm. 800g.
Cornish Yarg: A lovely gentle hard cheese. Mild yet full of flavour, it's a great looker, covered by nettles. It gives this stack great height. Cow's milk, pasteurised, vegetarian. 13cm x 9cm. 1kg.
Finn: A mature, double cream cheese made up the road at Neal's Yard Creamery, Dorstone. It has a firm texture with a fresh creamy acidity. Weighing about 200g, they are 9cm wide by 4cm. Pasteurised, cow's
milk,vegetarian 9cm x 4cm. 200g.
Dorstone: A wonderfully smooth ashed goats cheese from the Neals Yard Creamery. Named after the Herefordshire village near where the cheese is made. ; Cut open the slightly funky looking exterior and you'll be presented with gorgeous, soft, pure white moosey goats cheese yummyness. It's a great topper to a wedding stack and looks amazing on any cheese board. Pasteurised, goat's milk. 5cm x 7cm. 200g.
For the vegetarian cheese cake, we would substitute a mini Cerney Ash for the Dorstone, which is a very similar cheese made by the Cotswold Cheese Company, but with vegetarian rennet, all the other cheese are already vegetarian.
For a gathering we recommend 50 - 100g per person, depending if the cheese is to be eaten straight after the meal or later in the evening and with other food or by itself.
