Cheshire is Britain's oldest cheese, dating back to Roman times and mentioned in the Doomsday Book. The Appleby family are one of the true cheese making familys of the Great Britain with Lance and Lucy Appleby awarded MBEs for their services to cheese making in Shropshire, in 2001. They officially started making their own cheese in 1952 but had always been involved throughout their early lives. Now second and third generation Applebys are involved in the business and are committed to making the cheese by the traditional methods that gives us such a wonderful product to sell.
A half of a Red Cheshire is a great base to a small wedding cake as it gives height, or if you're looking for a little less, a quarter is about a 6cm high circle. Team it with a Cashel Blue and you're on your way to a great stack!
