Picos Blue Cheese is made from a mixture of cow, and sometimes goat or ewe's milk (depending on what's in season) and matured after being wrapped in sycamore leaves. Picos Blue Spanish Cheese is really tasty and a great favourite of those who want a strong spicy blue cheese. Made by the Picos de Europa dairy, based in the Picos Mountains of Northern Spain (an amazing place to visit so I'm told). The cheeses are matured in caves and old mines for about 6 weeks. The goat's milk gives the cheese a real added hit of strength, so it does vary a fair bit depending on when it's made (like many cheeses).
Another cheese with the renowned Penicillium Roqueforti mould in (think stilton, roquefort, et al) it's a real treat and flies out of the Hereford shop.
