Stilton was first known at the beginning of the eighteenth century. Stilton cheese was originally made in the town of Stilton, but now the PDO(Protected Designation of Origin) stipulates that it can only be made in the three adjacent counties of Nottinghamshire, Derbyshire and Leicestershire.
Stilton is a rich cream colour with blue veining all the way through, smooth and creamy with a mellow flavour and is best eaten at around 12 weeks.
This is a great value blue to have on a wedding stack although you wouldn't think it by the quality! Pictured second cheese up in both wedding cheese images on this page.
