Appenzeller cheese is a hard cows milk cheese produced in the Appenzell region of northeast Switzerland. Black Label Appenzeller cheese is matured for over 6 months and has the most depth of flavour. A herbal brine, sometimes incorporating wine or cider is applied to the wheels of cheese while they cure, which flavours and preserves the cheese while promoting the formation of a rind. Appenzeller has a documented history of at least 700 years. Today, about 75 dairies produce it, each with a different recipe for their brine wash. Most of the recipes are trade secrets! With nutty notes and a spicy finish, its a very fruity cheese.  The brine wash gives the cheese a great depth of flavour.  A staple in a swiss fondue.

Great from the start

I could not have been happier with my purchase. The staff were most helpful attentive and knowledgeable. The goods and selection/chose impeccable.
I Am so sorry for the lack of a star as, I could never obtain free deliveries as the only time I tried was on a Thursday and it arrived on the following Monday.
This was because of the company used, they have since been changed, I believe.
It has to be said, Firstly I was not charged for the goods, and secondly the goods embarrassingly arrived in perfect condition, which shows how well they were packed.
As I say I'm still going to use this cheese supplier as I believe they cannot be equaled, I just find it worrying to have the free delivery.
Laura deserves an extra mention.

very good. ideal for a raclette meal. not as much taste as gruyere but melts down well. not too expensive
