Bleu Des Causses cheese benefits from a Protected Designation of Origin and is known as 'poor man's Roquefort'. This French blue cheese is cheaper as it is made from more plentiful cow's milk rather than Ewes (but it's still very delicious and perhaps more palatable if you find Roquefort a bit mega strong). The milk used is from Montberliarde and Aubrac cows. It has a gorgeous creamy texture with a salty full flavour and, like roquefort, is matured for 3-6 months in natural, north-facing limestone caves which are exposed to fresh breezes. Each cheese weighs approx 2 to 3 kg but we receive ours as semi circle.
