Little Hereford cheese is handmade at a local dairy at Monkland A hard raw milk cheese, the unpasteusrised cow's milk give the cheese a lovely medium mature flavour. It is made to Helen Yeld's original recipe, who was Herefordshire's chief dairy maid in the 19th Century.
One of our customers who was in her 90s when we first took over mousetrap remembered Ellen, who used to ride around on her bike selling cheese from the basket on the front, always wearing a huge hat with an enormous feather in and lovely full length dresses, not the image I had in my mind of a dairy maid! The cheese itself is medium strength but has a nice lingering flavour, matured for 4 months it still has a freshness about it that mixes with the hard but slightly crumbly texture of the cheese, melting into a pleasant creamy mouthful as you get going. Made with unpasteurised milk and traditional rennet.
This makes a beautiful base to a wedding cheese as you can see on the Connie.

Little Hereford from Monkland Cheese Dairy is a hard farmhouse cheese that’s quickly become a cheeseboard favourite. Not a traditional Cheddar, it’s a cross between Caerphilly and Cheddar, made from raw cow’s milk and matured for 4 months. It has a slightly crumbly texture and a medium-strength, full-bodied flavour — nutty, tangy, and satisfying with every bite. Perfect on its own or paired with crusty bread, crackers, apples, chutney, or a crisp cider. Bold, distinctive, and always a hit with cheese lovers.
Delivery was on time and as expected. Cheese was lovely. If we were nearer we would visit the shop every week
