Matt and Claire would like to welcome you to our wonderful world of cheese!  Having taken over the Mousetrap Cheese shops in 2012, Matt and Claire Knowles have taken the business from strength to strength, taking trade online and now delivering thousands of parcels throughout the UK every year as well as satisfying the cheese needs of Hereford and Ludlow.

Mousetrap Cheese was first started by Mark and Cass Hindle, setting up the Leominster shop in about 1992.  Shortly thereafter opening Hereford and then the Ludlow shop a few years later.  They also set up the local Monkland Dairy, making wonderful local cheese that is still available today.  Not surprisingly they decided this, and raising 2 kids was all a bit too much, so put the shops on the market for Claire and Matt to come along and buy.

Matt and Claire had decided they wanted a change of lifestyle so with a 2 and 4 year old in tow, we quit our jobs, sold our house and took an almighty leap of faith to Herefordshire, spending the equity as well as every penny we could beg and borrow on buying some cheese shops!  Thankfully it was worth the risk and we're so happy that the lovely town of Hereford has become our home.  

We're very lucky to be surrounded by a wonderful team, they're are a lovely bunch, willing and ready to chat all things cheese and anything else that's going on for that matter so do pop in and say hi!

Matt and Claires expertise now see's them judging in the British Artisan Cheese awards and appearing on the BBC both TV and radio.
