Celtic Promise Cheese, cider washed Welsh cheese

Celtic Promise is a very interesting Welsh cheese.  Starting as a Caerphilly type of cheese, it is washed in cider twice a week for seven weeks, creating the lovely orange pungent rind.  Still a delicate cheese inside, the contrast is a very tasty package!  Made by John Savage of Teifi Farmhouse Cheese and originally matured by cheese Guru James Aldridge, now by Pat Jackson.
