Finn cheese is a mature, double cream cheese (so more cream is added to the milk) made at Neal's Yard Creamery. Finn is a British soft cheese that has a firm texture with a fresh creamy acidity when young. As Finn ages, you get a more mushroomy flavour infusing from the rind and a softer cheese. This gloriously rich and tasty soft white cheese is one of Claires favourites! Made by Charlie Westhead, who was involved in starting up the Neal's Yard Dairy, he soon hankered after a simpler life so made the splendid decision to move to Herefordshire. We're very lucky to have him and his team as one of our most local dairies, and we're very proud to stock their really gorgeous cheese.
Often used on, or near the top of a cheese wedding cake, a Finn is 9cm x 4cm and about 200g.
